Adzuki bean (or red bean) is commonly used as a filling for confectionery when cooked into a paste. Some delicious desserts with red beans paste include pancakes, mooncakes and dumplings etc. Adzuki beans can be sprouted and added to salads for that special colourful effect.
Recipe for an appetizing and delicious dessert
Soak 1 cup of adzuki beans and 1/2 cup of peanuts separately overnight. Wash 1 cup of black glutinous rice. Discard soaking water and cook all ingredients in a pot of clean water. Bring to boil, lower heat and simmer till beans soften. Stir well then sweeten with raw sugar. Pandan leaves may be added for extra fragrance.
